I just made do with whatever I could find in my kitchen. It turned into a keeper. Simply by the luck of the leftovers, these include sliced cucumber, shredded carrots, chopped walnuts, and crumbled feta, using hummus as glue and dijon mustard for flavor. All wrapped in a collard leaf. So delicious. There are six photos of me eating this for lunch at the picnic table overlooking Guana River at the GTM Reserve.
