Gov. Cabrera instituted a tax on beef at the slaughterhouse
One further crown revenue from a monopoly came from the 3 reales per beef charged at the royal slaughterhouse. Governor Marquez Cabrera instituted this fee in the 1680s to pay for construction of the slaughterhouse and raise money for the castillo. It was one of his little perquisites to be given the beef tongues. [Note 50: Three ranchers 8/28/1689] AN240
